AIP Nachos

Ingredients:

-plantain chips
-chicken (sliced or pulled)
-red onion
-mango
-green onion
-mashed avocado
-lemon
-salt
-cilantro
-queso (recipe from He Won’t Know It’s Paleo here)

Directions:

1. Put chicken in the oven at 350 degrees.
2. While chicken is in the oven, prepare queso recipe, then mash avocado and add lemon + salt.
3. Once chicken is done, pull or slice. Finish slicing mango, green onion, red onion, and cilantro.
4. To assemble nachos lay plantain chips on a plate and top with queso, chicken, mashed avo, green onion, red onion, mango, and garnish with cilantro.
