Arugula Guacamole Recipe
My boyfriend and I are completely obsessed with this and have continued to tailor it. We put it on basically everything 😳
3-4 ripe avocados
3-5 cloves of roasted garlic (depending on your ❤️ of garlic), chopped finely!
2 tablespoons of Bragg’s apple cider vinegar
1-2 handfuls of arugula either finely chopped (as in photo) or put in food processor
Juice from 1 lemon 🍋
Pink Himalayan sea salt, to taste
Mix all ingredients and serve!
This is a super fresh tasting guac. And good with so many things! It’s paired here with plantain chips, but I’ve used it on sweet potato toast, on top of hearty soups, on a portabella burger (here), and on #glutenfree toast.
