FISH TACOS (AIP, GLUTEN FREE)

Ingredients:
-1-2 cod filets (could also substitute for another fish like salmon, or shrimp)
-1 diced mango
-1/2 cup diced red onion
-1/4 cup cilantro
-1 lemon
-1 head of lettuce
-arugula guacamole (recipe HERE) or 1 diced avocado
-salt to taste

Directions:
-preheat oven to ‘broil’ setting on 400 degrees
-while the oven is preheating, dice the mango, red onion, and cilantro (optional: either prepare the arugula guac or just dice avocado, up to you! :))
-squeeze half a lemon on cod filet, then sprinkle with salt, put into oven for 6-8 minutes
-once the fish is cooked, set out your separate ingredients to assemble your “taco”
-start with the lettuce cup, add flaked fish, mango, red onion, guac or avocado, squeeze of lemon, and garnish with cilantro
